Caribbean Coconut Cashew Bites
I love granola, but most store bought ones are loaded with sugar and make me feel terrible after eating them! Sometimes, I think I am the only one that this happens to and I just realize that I can't buy granola no matter how bad the craving is every time I walk down the aisle at the market. I basically just have to avoid the aisle in general. BUT, this grainless granola from Paleo Passion Foods is so low in sugar, grain free, and gluten free! This is perfect for someone like me, who has to stay away from added sugar and high sugary foods because my body just can not digest it easily! Plus, it is ADDICTING and made with such good ingredients like walnuts, almonds, flaxseed, cinnamon, honey, sunflower seeds and just a few others! Also, they come in three different flavors: Caribbean Coconut, Maple Cinnamon, and Choco-Nuts. I honestly can't pick a favorite one and every time I open the bag I always think it's my new favorite of the flavors- they are just too good, so clustery, and crunchy!

Anyways, THESE BITES!!! They are so coconut-y, crunchy, a little sweet, and just the right amount of salty! Usually I always make chocolate ones, but I wanted to change things up, plus I have recently been obsessed with cashew butter and new that it would be the perfect combination with the coconut granola! If you follow me, you know that I am always making little bites, as in a few times a week. They are just so easy to make, as in takes about 10 minutes of your time- you can just throw everything in a blender and roll them up! They are perfect for on the go snacks, before a workout, or a little treat post dinner. Plus, I like making my own types of bites or bars because you know exactly what you are putting in them!
I didn't need to add that much flavor to the mix because the caribbean coconut grainless granola already packs a punch. The granola is filled with coconut, walnuts, almonds, lemon peel, cinnamon, flaxseed, honey, coconut oil and a few others. So I really just added a little more coconut, some maca powder, collagen powder, chia seeds for extra health benefits and of course the cashew butter to bind everything together! It is the simple!
All you need to do is put everything in a food processor, give it a few pulses, add the cashew butter to ensure it sticks together. Place it in the fridge for a few minutes and then get rolling! You can then keep them plain or even roll them in shredded coconut or chia seeds!

Healthy Snack
Prep time: 10 minutes (no bake)
Yields: depending on size about 10 (on the larger size)
Ingredients:
1 bag of Paleo Passion Foods' Caribbean Coconut Grainless Granola
1/2 cup chia seeds
1 tsp. maca powder
2 scoops collagen peptides (optional)
dash of cinnamon
pinch of sea salt
1/4 cup unsweetened shredded coconut
3/4 cup cashew butter
1 tbsp. vanilla
optional add-ins:
cacao nibs, dairy free chocolate chips, sweetener of choice
Directions:
1. Add the caribbean coconut granola to your food process and pulse a few times until somewhat crumbly. (I tend to like a little texture in the bites, so I didn't process it until a flour consistency forms)
2. Add the dry ingredients to the mix and pulse 2-3 times, just until incorporated.
3. Add the cashew butter and vanilla. Process until well combined. *
*If the mixture is hard to roll, place in the freezer for about ten minutes to firm. You can either roll into balls or place in an 8X8 pan and later cut them into squares! Will stay good for about two weeks in the fridge or longer in the freezer!
