Crispy Baked Cauliflower Steaks
When Todd and I went to Palm Springs the other week for our vacation, we went to this one restaurant for dinner and ordered these lightly fried cauliflower steaks. They were drizzled with tahini, hot sauce, and were absolutely delicious! I loved them so much that I ordered another order before I even finished the first one!
I had been craving them since being home and wanted to attempt to make some for myself. I didn’t fry these, but baked them in the oven with panko crumbs and they were so delicious! Tender in the middle, crispy edges, and full of flavor! I think the hardest part in making cauliflower steaks is making sure you start with a big enough sized cauliflower so you can cut it into 1 inch sized “steaks.” They can break easily so you just have to take your time!
They are best served immediately, but once they are completely cooled you can store them in the fridge for up to 3-4 days and simply reheat them in the oven! These would make a great side dish to any protein or you can have them as a main meal with brown rice or veggies on the side!
For a frame of reference: 1 small head of cauliflower gave me 2 “steaks” so I would suggest using the largest one you can find (easier to cut that way too) or one that will give u the serving size you need.
Yields:
3-4 steaks, depending on the size of the cauliflower
Prep time: 10 minutes
Cook time: 40 minutes
Total time: less than 1 hour
Ingredients:
-1 head of cauliflower (preferably large in size)
- about 3 tbsp of olive oil or coconut oil
1 tsp. of sea salt
1-2 tsp. pepper
- 2-3 tbsp rosemary
- 1/4 cup panko crumbs or bread crumbs
optional: garlic, grated cheese (or dairy free cheese)
Directions:

Preheat your oven to 400. Line a baking sheet with parchment paper.

Carefully take the leaves off of the cauliflower and cut a little of the stem off.

Using a large knife, cut down the center of the cauliflower. Carefully, so it doesn’t all break apart!!

Next, slice into 1 inch think slices. Line on baking sheet.

In a small bowl, add the olive oil and the spices you are using.

Brush onto the cauliflower steaks (using a brush or your hands!)

Sprinkle the panko crumbs on top.

Bake at 400 for 40 mins TOTAL, flipping halfway!

If you want them a bit crispier you can place them under the broiler for 5 mins.

To serve I drizzled tahini on top but you could do any type of dressing you like!
