Apple Pie Oatmeal Bake
Recently on the weekends I have been making oatmeal bakes for easy quick breakfasts in the morning or afternoon snacks! I love how simple they are to make and that you can constantly change up the flavors each time! Last week I shared with you these oatmeal bake cups, in four different flavors (chocolate, original, berry, and savory green). Today, I am leaving you with an apple pie oatmeal bake. As many of you know, I am so close to meeting my little girl! She is due in less than 20 days. I haven’t been able to do much in terms of working out, teaching classes, and have really been resting the last week. I am going a bit stir crazy because there isn’t much to do in her room or prepare much else for her arrival, so I have been trying to stay busy and distracted with cooking and baking as much as I can.
What I love about these oatmeal bakes are they are 100% freezer friendly. In fact, I usually allow the oatmeal to completely cool and then freeze all of the slices. You can either reheat in the microwave or in the oven. Also, if you are a mom and currently breastfeeding - oatmeal is great for you!! It is also full of fiber and great for your digestion - it always keeps me so full in the mornings!
Apple Pie oatmeal bake with sliced apples and coconut butter on top!
This recipe will give you about 9 larger slices that will last up to one week or so in the fridge! You can store them in the freezer for up to 1 month as well. I love eating the slices with peanut butter, coconut butter, or in a bowl with a few splashes of almond milk!
Feel free to use any subs for the nut milk, especially if you are allergic to nuts! You can also quickly sautee the apples on the stove top in coconut oil with cinnamon before baking them too! They will taste a bit sweeter, but so delicious.
Prep time:
10 minutes
Bake time: 25-30 minutes
Total time: less than 45 minutes
Ingredients:
Yields: About 9 large squares
3 cups gluten free quick cooking oats
3 cups almond milk (or non dairy sub or water!)
1/4 cup chia seeds
1/4 cup ground flaxseeds (optional)
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup applesauce
dash of vanilla
2 tbsp. maple syrup or coconut sugar (optional)
1 large granny smith apple (or apple of choice), diced
Directions:

Preheat your oven to 400 degrees

Grease a 9x9 baking sheet (like a brownie pan) with cooking spray or coconut oil.

Mix ALL of the above ingredients in a large bowl until combined

Pour into the prepared baking dish

Bake at 400 degrees for about 25-30 minutes

Allow to cool and then cut into slices!

Keep in the fridge for up to one week or the freezer for 1 month.
